家里怎么用小麥磨面粉？

小麥磨成面粉的過(guò)程 麥粒進(jìn)化（Wheat Cleaning） 小麥收獲后用機械脫下麥粒，裝袋進(jìn)廠(chǎng)，利用升降機及機械輸送，把來(lái)自各方的麥粒儲存在糧倉中，再經(jīng)專(zhuān)門(mén)人員挑選分類(lèi)，進(jìn)行雜質(zhì)處理（因小麥中的雜質(zhì)會(huì )一方面損毀磨粉機械，一方面影響面粉質(zhì)量）包括如用麥篩篩去麥桿、破皮、石頭、麻繩等碎片；用分麥機除去大麥、燕麥、黑麥殼粒；用風(fēng)力分離機，根據比重之不同，除去灰塵糠殼等輕小雜質(zhì)；用磁鐵吸去磁性金屬；用水洗機將沙礫及非磁性金屬雜質(zhì)除去；用干式機的摩擦力除去麥粒上的臟質(zhì)；用洗麥機清洗麥粒上的小毛簇（Tuft）及附著(zhù)的污物，特別是麥粒腹溝上的污穢，若是有黑穗?。⊿mut）則加入石灰清洗。 為使隨后而來(lái)的磨粉工作更順利和提高出粉率，必須對各類(lèi)型的麥粒加水調溫[這過(guò)程稱(chēng)為調質(zhì)（Conditioning）]。如把凈化后的麥粒經(jīng)水浸泡過(guò)18～72小時(shí)會(huì )變韌，麩皮易與顆粒分離。顆粒易于磨碎，麥芽成扁平狀，易被篩出。加水的方法，分多次將水成霧狀噴出。同樣的目的，還要對麥粒進(jìn)行溫度調節。方法是將麥粒加熱至42～45℃，再冷卻與室溫一樣，最后清洗顆粒，用風(fēng)力把殼和粒分離，送去磨粉。 磨粉（Grinding Operations） 小麥粒經(jīng)過(guò)精選與加水調溫以后，即可使麩皮、胚乳及麥芽三者分離磨粉。因為胚乳與麩皮結合緊密，所以分離時(shí)要小心，盡量減少破壞，剝刮干凈，以免浪費。 整個(gè)過(guò)程分為粗磨、清粉及細磨。粗磨即是用兩個(gè)有刻齒的鋼輥軸以相向而不同速度轉動(dòng)（上輥軸比下輥軸快21/2倍），將小麥粒之外皮輕度裂開(kāi)，取出粗粒及平而大之片狀麩皮，通過(guò)清粉（Purification），用精選機，利用不同的比重而保留純凈的胚乳粒。輕的麩皮會(huì )隨著(zhù)注入的風(fēng)力而上浮，余下較重的胚乳粉料，進(jìn)入細磨（Reduction）階段。先經(jīng)過(guò)光滾磨粉機壓扁胚乳，磨成細粉。被壓扁的麥芽經(jīng)麥芽分離機而釋出（這是從前石磨不能做的工作）。細粉又經(jīng)過(guò)多層平面旋轉式篩粉機分出種類(lèi)，分出等級。粗糙顆粒再磨（或作麩皮用途）；幼細顆粒作低價(jià)面粉；粗糙碎片再加工，以除去麥芽及磨細成幼細碎片；幼細碎片再細磨成上優(yōu)面粉。
