番茄紅素（lycopene），是一種類(lèi)胡蘿卜素之天然色素。它在番茄、西瓜、胡蘿卜、紅葡萄柚、番石榴、薔薇果中含量較多。其中成熟的番茄中最富含番茄紅素。通常品種成熟的番茄，每千克中大約含20毫克番茄紅素。人體內也含有番茄紅素，但我們的身體不會(huì )自行合成番茄紅素，只能從食物中攝取。

當番茄紅素攝入體內時(shí)，經(jīng)由小腸吸收再與乳糜微粒結合后進(jìn)入淋巴管，再輸入到體內各器官組織，高濃度分布于肝、肺、前列腺、腎上腺、結腸、皮膚中。番茄紅素在人體內的濃度是多變的。一般服用后24—48小時(shí)可達到血中最高濃度，而其血清半衰期約為2—3天。重復服用會(huì )提高人體內番茄紅素的濃度。

據研究，每天攝入15毫克以上的番茄紅素，會(huì )更有利于身體健康。但通常人們很難達到如此高的攝入量。通過(guò)服用高度濃縮的番茄紅素制劑，是補充番茄紅素的有效途徑。并且，經(jīng)過(guò)加工的番茄紅素會(huì )更容易被人體吸收。
