番茄紅素(lycopene),是一種類(lèi)胡蘿卜素之天然色素。它在番茄、西瓜、胡蘿卜、紅葡萄柚、番石榴、薔薇果中含量較多。其中成熟的番茄中最富含番茄紅素。通常品種成熟的番茄,每千克中大約含20毫克番茄紅素。人體內也含有番茄紅素,但我們的身體不會(huì )自行合成番茄紅素,只能從食物中攝取。
