牛乳的蛋白質(zhì)主要是含磷蛋白質(zhì)-酪蛋白(casein)，含率平均2.9%；也含白蛋白(albumin)及球蛋白(globulin)，此3種蛋白質(zhì)都含全部必需氨基酸。牛乳的脂肪主要是棕櫚酸(cetylic acid)、硬脂酸(stearic acid)的甘油酯，也含少量低級脂肪酸如丁酸(butyric acid)、己酸(hexanoic acid)、辛酸(cholesterol)，色素等；牛乳中的糖主要是乳糖(lecithin)，膽甾醇(cholesterol)，色素等。牛乳中的糖主要是乳糖(lactose)。牛乳中的灰分除鈣、磷、鐵外，尚有鎂、鉀、鈉等。
