作為膠凝劑的瓊脂糖是不含硫酸酯（鹽）的非離子型多糖，是形成凝膠的組分，其大分子鏈鏈節在1，3苷鍵交替地相連的β-D-吡喃半乳糖殘基和3,6-α-L-吡喃半乳糖殘基。而瓊脂果膠是非凝膠部分，是帶有硫酸酯（鹽）、葡萄糖醛酸和丙酮酸醛的復雜多糖，也是商業(yè)提取中力圖去掉的部分。商品瓊脂一般帶有2%―7%的硫酸酯（鹽），0%―3%的丙酮酸醛及1%―3%的甲乙基。在工業(yè)上的瓊脂
